I  like salsa! But I LOVEEE fresh salsa even more! 

Here my friends is a quick recipe for a Sweet Summer Mango Jalapeño Salsa. This is a perfect salsa to accompany any meal. 

1 (14.5oz) can of fire roasted diced tomatoes, drained

1 whole mango, finely diced

1.5 jalapeños, seeded, finely chopped

2 green onions chopped

3/4 cup fresh cilantro, chopped

1 teaspoon lime zest

1 teaspoon orange zest 

1 lime, juiced

1/4 teaspoon salt 

I served this over some lettuce with grilled chicken. It was AMAZING! and Husband LOVED it. 

Great for a fresh summer salsa!

Sarah's Bachelorette party/Bridal Shower

T's sister is getting married in just a few short weeks! EEEK! 

I had the wonderful privilege of throwing the family bridal shower. I kept it anchor themed (she is getting married on a yacht!) I had a local pastry shop cater the event.

The following night was her bachelorette party up in Park City. I helped one of her cute friends set up and decorate. We had a relaxing night with some fun games! 

(each girl was asked to bring a panty in Sarahs size that they would pick out. Then Sarah had to guess who brought what...It was so fun and we had some good laughs)

Can't wait for May 9th! 

Paddington

If you know me at all you'll know that I am a cat lady. YES I admit it! 

A week ago Tom and I were enjoying our Sunday coffee at the bookstore and I convinced him to walk over to this cute little animal shelter close to our house. We walked in and saw the most adorable white kitty you have ever seen.....AND now we are parents to the most adorable kitten! We named him Paddington after one of our favorite stops in London. 

We love him so much!

Happy Easter! 

T and I had a wonderful holiday weekend. We decided to go on a shopping date Saturday to pick out some new patio furnature and stop by the outlet mall. We got an adorable patio set and some new plants to enjoy outside. We ended the night indulging in indian food and a glass of wine on our newly furnished patio. 

 Easter was spent with our families. We sure do love when the Easter bunny comes to visit us!

Spring break

Some exciting things have happened since our Euro trip:

1. We just got back from a cruise to Mexico with all our friends!

2. We moved into a darling little apartment. We take the train and walk a lot now. It makes us happy.

3. I am all signed up for graduate school...May 12 here I come!

4. And probably the most exciting news of all.... I got the internship of a lifetime. More on this later.
